Tabbouleh

This is great for a summer gathering.

Ingredients

  1. 1 cup bulghur wheat
  2. 1/2 cup finely chopped onion
  3. 2 cups chopped parsley
  4. 4 tablespoons chopped mint (or much more – even 1/2 cup or more)
  5. 3 medium tomatoes, finely chopped (roma is good)
  6. 1/2 cup lemon juice (or more)
  7. 1/2 cup olive oil
  8. 1 pinch of fresh ground black pepper
  9. 1 romaine lettuce – leaves washed and separated
  10. 1 dozen pita breads

Directions:

  1. Cover bulghur with plenty of cold water and leave for one hour.
  2. Drain bulghur and squeeze out any excess water.
  3. Spread on cheese cloth to dry further.
  4. Put swollen wheat into large bowl, gently stir in all the other ingredients except the romaine.
  5. Slice pita bread into wedges.
  6. Line bowl with romaine, pile on tabbouleh and garnish with lemon wedges.
  7. Serve with pita bread on the side.
